WholeWheat Flapjacks and Apple Butter



2C. whole wheat
4 tsp. b. powder
2 tsp. sugar
1/2 tsp salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs
2 C. milk

Mix dry ingredients together. Slightly beat eggs and milk ...Add to dry ingredients stir till just blended. Cook turning once.

We bought the apple butter in Cache Creek on our way back to the Island (home). It was really yummy but more like a chunky applesauce than an applebutter.

I've never thought to put apple butter on pancakes instead of syrup. What a tasty idea.

Have you ever made them with whole wheat pastry flour? It's all i have on hand.

I never buy the whole wheat pastry flour but I am sure it would be fine. Sweet pea and I usually just have fruit on our pancakes...some frozen berries melted in a pot and sometimes I add a little maple syrup...The Crow only eats his drowning in maple syrup.
